Since Monday is usually my one day off from both my jobs, I usually bake a Crockpot recipe for dinner. I’ve seen a lot of chicken and dumpling recipes but I decided to cook this one. I thought it turned out really good. You might also enjoy it without the biscuits. It could be served on mashed potatoes.
Crockpot Chicken and Dumplings from Pinterest
2 chicken breast
Top with two Tablespoons of butter
2 cans of cream of chicken
14.5 oz. can chicken broth
½ diced onion
1 T. dried parsley
Bake on high for 4-5 hours or 8-9 hours on low. Dice chicken and add back to mix. Dice up four refrigerator biscuits into nice pieces each and add to mix. Cook for one more hour.
- I used the healthy version (less sodium) version of cream of chicken and chicken broth.
Who doesn’t love a simple four ingredient recipe? This Crockpot recipe only takes about 5 minutes of your time to make.
Crockpot Lemon Chicken from Pinterest
3-4 T. butter
1 lb. boneless, skinless chicken breast
1 package of Italian seasoning
Cube butter and place on the bottom of a Crockpot. Top with chicken breast. Sprinkle with Italian seasoning. Drizzle with lemon juice. Bake on low for 6-8 hours or on high for 4-5 hours.
A great crockpot recipe for a day you don’t really feel like cooking.
Chicken Strogenoff from Pinterest
4 frozen chicken breast
1 can of cream of mushroom soup
1 brick of cream cheese
3/4 c. sour cream
8 oz. cooked pasta
Place chicken in crockpot. Cover with soup and cubed cream cheese. Cook on low for 8 hours. Stir 2-3 times throughout the day. About twenty minutes before it is finished, add sour cream. On the stove, cook pasta and drain. Add pasta to crockpot and serve.
- I used reduced fat cream of mushroom soup and cream cheese.
- I used fat free sour cream.
- The orginal recipe called for egg noodles. I used penne pasta.
My ex P used to marinate and grill chicken for dinner most nights. He loved to serve it with black beans and rice. One of my favorite marinade he made was just Italian dressing and chicken breast. I don’t cook it very often at my house because grilling on my stove top is an invitation to set off my smoke detector before the chicken is cooked. I ran across this freezer to Crockpot recipe and decided to give it a try. It make be missing the grill marks but it taste the same.
I liked the recipe so much that I made it for both my mother and sister as freezer Christmas gifts. My mother tried it a few days ago and liked it too.
Cafe Rio Crockpot Chicken from Pinterest
3 chicken breast
1/4 of bottle of Italian dressing
1/2 packet of dry ranch dressing
1/4 c. water
1/4 T. minced garlic
1/4 T. chili powder
1/4 T. ground cumin
From freezer, thaw for one hour or run under warm water for 30 seconds. Cook on low for 4-6 hours.
In the last month, I have become a more active user of Pinterest. Part of the reason I because I am helping a great animal shelter called Wayside Waifs try to win the ASPCA/Rachael Ray 100K Challenge.
Wayside Waifs is Kansas City’s largest no-kill animal shelter. Each year, they find loving homes for near 6,500 abused, neglected, and abandoned animals in our community. Through the ASPCA/Rachael Ray Challenge, they are trying to increase their pet adoptions by the greatest percentage over last year. Since they run entirely on donations, their goal is to win the $100,000 grand prize so they can continue providing shelter for Kansas City’s most vulnerable animals.
One way I am helping achieve their social media goals designed to increase adoptions is by helping them with Pinterest. (I’m amazed I haven’t adopted one of these adorable little furry friends – they are so cute!) Spending a lot of time Pinning for them has increased my personal interest in Pinterest. With all the Pins of yummy food, I may never have to buy another recipe book/magazine again. This particular recipe came from a personal three hour binge pinning. I hope you enjoy it as much as I did. It kind of reminded me of Hamburger Casserole expect with chicken.
Crock Pot Chicken Casserole
1 (32 oz.) bag of tater tots
1 package (2 cups) cheddar cheese
3 oz. of cooked bacon or bacon bits
1 lb. boneless skinless chicken breast, diced and raw
Spray your crock pot with non-stick cooking spray. Pour in half a bag of tater tots. Layer with a 1/3 of cheese and bacon. Cover with diced pieces of chicken. Top with a 1/3 of cheese and bacon. Top with remaining tater tots. Finally top with remaining cheese and bacon. Bake on low for 4 – 4 1/2 hours (up to 6 hours if you have an older slow cooker.)
